1 Advance Prep:

Measure 3/4 cup (about 6 oz.) of chocolate chips and set aside.

Our preference of chips includes

*Guittard Akoma Extra Semisweet
*Guittard Semisweet
*Guittard Extra Dark
*Baker's Semisweet
*Whatever YOUR Favorite chocolate chip is!
2 Generously grease the bottom and sides of a 10" x 6" glass pan with butter. If that size dish is not available, use the nearest equivalent.
3 Stir Add 1 stick (equal to 4 oz./8 tablespoons) of premium butter to a 1 1/2 quart-sized pot (or its nearest equivalent).

We prefer Clover Sweet Butter, Tillamook or Challenge, but there are other choices in your neighborhood grocer that may be more to your taste.

Choose the one you like best.
4 Stir Add 1 small can of evaporated milk (5 oz.) to the mixture.
5 Stir Add to the pot 2 cups of granulated sugar.
6 Set stove temperature on high and allow mixture to come to a boil, stirring often.

Monitor your stove's heat. If the edge of the mixture begins to fold over onto itself, lower the temperature to medium high.

Continue to monitor and adjust the stovetop temperature as needed, depending on how quickly and intensely your stove tends to heat.
7 Remove from heat at 5 minutes.
8 QUICKLY add 1 teaspoon of Madagascar Vanilla to the mixture. Exercise caution as the alcohol in the vanilla will cause the mixture to bubble and squirt.
9 QUICKLY add a dash of sea salt to the mixture and stir.
10 Stir QUICKLY add 3/4 cup (about 6 oz.) of chocolate chips into the pot's mixture.
11 Stir QUICKLY add 12 marshmallows to the mixture.
12 Stir Stir the mixture until the marshmallows and chocolate are melted completely.

At this point, the batter should be very smooth in texture.
13 Pour mixture into greased glass pan.

Cool for about 20 minutes or until you are able to slice the fudge into squares.

**** Do NOT lift squares of fudge from pan. Wait until they are cooled completely.
14 Cover pan with plastic wrap and place in the fridge when the pan cools to room temperature.

Wait for 30 minutes and taste.

Smile and force yourself not to eat half the batch.
