  • Tomato Sauce : Pomodoro or Heirloom | | | 24 Ounce
  • Onion : Small yellow or white | | | 0.5 
  • Beans : snap, green, canned, no salt added, solids and liquids | | | 30 Ounce
  • Beans : Lima beans | | | 30 Ounce
  • Corn : sweet, white, canned, whole kernel, regular pack, solids and liquids | | | 30 Ounce
  • Mixed Vegetables : Carrots and Peas | | | 15 Ounce
  • Potato : Whole Potatoes | | | 30 Ounce
Steps:
  • Place Soup Pot on eye of stove.
    Pour in Vegetable Stock and 1 jar (or large can) of Tomato Sauce.

    We prefer Heirloom Tomato or Pomodoro Tomato sauce, but whatever equivalent you have in your cupboard will work.

  • Turn eye of stove to low and add 1/2 stick (4 tablespoons) of butter.

  • Add the following into pot:

    *2 teaspoons of salt
    *1 teaspoon of pepper
    *1 teaspoon of sugar.

  • 1/2 small onion and add to pot.

  • Drain and run cold water over canned vegetables.
    Then add the following to the soup mixture and stir slowly:

    2 cans of lima beans
    2 cans of cut green beans (slice them in half before adding to pot)
    2 cans sweet whole-kernel corn
    1 can mixed vegetables
    2 cans whole potatoes (slice in half or quarters)
    ** if you have fresh potatoes on hand, then wash about 5 of them, slice in bite-sizes and add to soup in place of canned potatoes. Adjust cook time accordingly.

  • Continue to stir occasionally on low until soup is ready to serve.

    Usually about 30 minutes, though we'll leave this to individual tastes.

  • Serve the soup with crackers or croutons or corn bread or a grilled cheese sandwich or salad or whatever complementary condiment you have in the fridge or cupboard.

  • If there is any soup left over, then allow to cool. Put remaining soup in tightly lidded plastic storage containers and place in freezer to enjoy another time!
